Olive Oil: minor constituents and health

Dimitrios Boskou

This book critically examines accumulated knowledge and contributes to a more balanced understanding of the pharmacological properties of phenols and other bioactive ingredients in light of new evidence about the composition of olive oil non-glyceride constituents. The book covers a broad range of topics, from the chemistry, structure, and function of the molecules to studies on the effects of such molecules on cell fate in growth, differentiation and apoptosis, to bioavailability and to anti-inflammatory and anti-thrombotic effect. Filled with well-structured, multi-layered reviews, the book draws on contributions from authors who are pioneers in their fields to explore questions about the potential health effects of the many lipid and non-lipid minor constituents of olive oil.
